Sanguisorba minor, also known as Salad Brunet, is native to Europe and the Mediterranean. It is an evergreen perennial in the family Rosaceae that is very easy to grow from seeds. Sanguisorba minor grows to 40-90 cm tall with deeply toothed leaflets and thimble-shaped crimson flower heads from May to September. Salad burnet is popular as an edible plant. It can be eaten raw or cooked. Salad Burnet gives a nutty, cucumber flavor to salads, vinegars, soups etc. Fresh leaves are rich in Vitamin C. Needs full sun and average, medium, well drained-soils.
